SINGLE MALT SCOTCH WHISKY
Single Malt Scotch Whisky is made in Scotland using a pot still distillation process at a single distillery. Malted barley must be the only cereal ingredient. As with any Scotch Whisky, a Single Malt must be distilled in Scotland and matured in oak casks in Scotland for at least three years. Single Cask Single Malt is a particularly premium class of Single Malt in which each bottle comes from an individual ageing cask, showing all its own distinct character, instead of being created by blending together the contents of various casks to provide uniformity of colour and taste. Our award-winning XOP, Old Particular and Provenance ranges offer that premium class of Single Cask Single Malt Scotch Whisky, at various different ages, to those seeking something truly extraordinary.
SINGLE GRAIN SCOTCH WHISKY
Single Grain Scotch Whisky is produced in Scotland at a single distillery, in a continuous process, produced from water and malted barley, with grains of other cereals (which may be malted or unmalted). There are only a few distilleries in Scotland that produce Single Grain Whisky these days, but our XOP and Old Particular Single Grain bottlings contain some of the oldest, finest and rarest liquids from many, including the esteemed (and now closed) likes of Dumbarton and Port Dundas Distilleries.
BLENDED MALT SCOTCH WHISKY
Previously known in the industry as “Vatted” Malt (a term that is still preferred by all at Douglas Laing), “Blended Malt” differs from simply “Blended” Whisky in that it contains no Grain Whisky, and is therefore widely considered a superior category. Our Remarkable Regional Malts (Big Peat from Islay, Scallywag from Speyside, Timorous Beastie from the Highlands and Rock Oyster, displaying the best from the Islands) are Blended Malt Scotch Whiskies, combining the spirit from some of the regions’ finest Distilleries to produce the ultimate territorial tastes of Scotland. If a Single Malt is a violin, you might consider a Blended Malt an entire orchestra.
Our roots have always been firmly in the art of blending. A Blended Whisky is one that contains both Malt and Grain Whiskies from two or more Distilleries, and the complexities of creating the finest blends, such as Douglas Laing’s The King of Scots and our McGibbon’s Special Reserve Blends, should not be underestimated.
HIGHLAND MALT SCOTCH WHISKY
The original Timorous Beastie, immortalised in Robert Burns’ famous Scots poem “To a Mouse” was a timid, little field mouse. Echoing our national bard’s wit, ours is most certainly not for the fainthearted! Timorous Beastie captures the essence of The Highlands; a marriage of the region’s finest Malts including Dalmore, Glengoyne and Glen Garioch. It is, of course, proudly without colouring or chill-filtration and bottled at 46.8% alcohol, resulting in an oily, chewy spirit that brings an incredible mouth-feel.
SPEYSIDE MALT SCOTCH WHISKY
Scallywag is a Small Batch bottling created using only the finest Speyside Malts including, amongst others, spirit distilled at Mortlach, Macallan and Glenrothes Distilleries. Bottled at 46% alcohol strength and proudly non chill-filtered, Scallywag embodies all that is Speyside Malt Scotch Whisky – beautifully sherried, richly spiced and truly charming. Spanish Sherry butts care for this spirit as it matures, naturally imparting the distinctly dark, rich colour. Inspired by a long line of Douglas Laing family Fox Terriers, the Scallywag name and endearing canine character are most fitting for this richly spiced and deliciously sweet Speyside Malt Scotch Whisky.
ISLAND MALT SCOTCH WHISKY
Prise open a rock oyster and you’d be lucky indeed to find a pearl. The real treasure though is the hidden, tasty delicacy inside, rich with the flavours of the sea. Bottled at 46.8% alcohol strength and traditionally without colouring or chill-filtration, this Small Batch bottling has a truly maritime and oceanic character of sea-salt, sweet peat, smoke, honey and pepper. Containing the finest Malt Whiskies from Scotland’s Whisky islands, including those distilled on Islay, Arran, Orkney and Jura, it’s no wonder our Master Blender Fred Laing says “If I could select just one dram to transport the Whisky enthusiast to the Islands of Scotland, it would be this Rock Oyster.”
ISLAY MALT SCOTCH WHISKY
Big Peat is a remarkable marriage of Malt Whiskies only from the island of Islay. He is, of course, proudly without colouring or chill-filtration and bottled at high alcohol strength (46%), resulting in a naturally oily spirit that promises an incredible mouth-feel. With Caol Ila spirit bringing sweetness, Bowmore the perfect balance, Ardbeg the medicinal, earthy quality and Port Ellen, a degree of elegance, Big Peat represents all that is Islay in a bottle. Fred Laing tells us that of course, there are a couple of Blender’s Secrets in Big Peat too – but even after a few drams, he won’t share that info – and so it remains our peaty little secret!
Douglas Laing’s Old Particular is a particularly unique series of individually hand-selected aged Single Cask Malts from all over Scotland. Each is bottled exactly the way the distiller intended: without colouring, or chill-filtration, thus allowing the cask and the naturally present oils, fats and enzymes in the spirit to make their own special contribution to its nose, mouthfeel, palate and finish. The result is as close as some come to experiencing that rarest of pleasures – sampling a dram straight from its cask in the hallowed surroundings of a distillery warehouse.

Douglas Laing’s XOP is the “big brother” to Old Particular (Extra Old Particular, if you will). We reserve the very best of our stocks for this range of aged and rare, premium whiskies. The Douglas Laing “family jewels”, each XOP release is one of a kind, and truly spectacular. Packaged in a luxurious, wooden hinged gift box, XOP’s wax-dipped bottle and individually numbered certificate honours the antique single malt and single grain whisky inside.
AN EXCEPTIONAL CHOICE
Fred Laing, our Master Blender, believes that the region where the barley grows and the spirit is distilled imparts unique characteristics to our whisky. This, he calls, the whisky’s “Provenance”, and so our range of Small Batch, often Single Cask bottlings, from an impressive portfolio of Scotland’s Distilleries is aptly named. Ranging from the “Young & Feisty” bottlings, from exceptional distilleries such as Bunnahabhain and Talisker, to aged expressions such as the unlucky-for-some 13 Years Old Caol Ila, the Provenance range is without colouring or chill-filtration and bottled at high alcohol strength, typically 46%.
YULA ISLAND MALT SCOTCH WHISKY
Inspired by the ancient Islay legend of a beautiful but tragic Norse goddess, Douglas Laing’s Yula 20 Years Old is the first in a trilogy of Limited Edition Island Malt Scotch Whiskies. Only 900 bottles of this cask strength, attractively peated Malt exist globally.
