Sweden – whisky – single malt.. Doesn’t quite roll off the tongue but it should !! The innovative and award winning distillery is pushing the boundaries of whisky production into its next era..

Founded in 1999 the Mackmyra distillery is the new Era in whisky production and lets face it that’s no surprise when it comes to products from Sweden !! They don’t do things the conventional way, gravity plays a part in production and so does Swedish oak, Juniper and even caves.. Like i said nothing is conventional here. The only thing that feels normal is the high quality of whisky they are producing and that if i am honest was never going to be in doubt.

Mackmyra Björksav (birch sap) is a Swedish single malt whisky
inspired by the long-awaited return of spring.

By including casks that were seasoned with Swedish birch sap wine, we have created a floral whisky with a fresh spiciness and sweet notes of vanilla fudge. Björksav is a collaboration with our friends at Grythyttan wine.

• Whisky aged in ex-Bourbon casks makes up about 30% of the total recipe.
• Whisky aged in oloroso casks makes up about 24% of the total recipe
• Whisky finished in birch sap wine seasoned casks makes up about 20%
of the total recipe.
• Whisky aged in other types of seasoned casks makes up about 18% of the recipe.
• Whisky aged in casks of Swedish oak makes up about 8% of the recipe.

Casks.. Ex Bourbon – Oloroso – Seasoned Birch sap wine – Swedish Oak

Nose.. This is instantly very fresh as those weird and wonderful aromas we associate with Mackmyra kick in to tantalise the senses.. Fresh pear and the juices from a freshly bitten apple mingle with fudge, pine and dried fruits.. There is a nice lemon citrus note that isnt quite lemon drizzle cake nor lemon peel… Just somewhere in between. Add some freshly mown grass early in the morning and still covered the nights dew, fresh blossom on the trees and the scent of the fresh linen hanging on the washing lines.

Palate.. A soft spicy start introduces those fruits perfectly.. Apple, pear, peach and a hint of roasted pineapple blends nicely into a slightly bitter sap note, lemon peels and then the spices ramp up a little with fresh ginger and cinnamon coming through before a subtle pepper kick arrives. That vanilla and fudge note carries on but struggles to really showcase itself..

Thoughts.. I did wonder how i would find this whisky but upon first try i really like this.. Its light, fruity and floral which just sits perfectly with me.

There is a real Spring / Summer feel to this which really helps to highlight those subtle notes that are present within this whisky. Nothing is overly dominant, nothing ever stops you from finding those softer notes and everything does get its moment to shine..

Quality and innovation goes hand in hand with this distillery and the day they release a box standard whisky will probably be the day they give up..

Great stuff from Mackmyra and to be honest this might actually be my favourite release from them to date !!
